Recipe Linguine with lemon (pasta al limone)
- 400g linguine
- 1 organic lemon
- 60g butter
- 80 g of parmesan
- fresh basilic
- salt pepper
Cook the linguine in plenty of salted boiling water for the time indicated on the packet.
Grate the lemon zest and squeeze the juice. Book separately.
Melt the butter in a skillet over low heat then add the lemon juice and mix well.
Add half of the lemon zest, salt and pepper then stir until the sauce thickens slightly.
Add the al dente linguine and one or two ladlefuls of cooking water. Raise the heat a little and sprinkle with grated parmesan. Continue to stir until the texture of the sauce is as desired.
Serve with a little chopped fresh basil!
