The Cyprianenc obtained very good results during the tests which took place in Paris.
Kevin Balestrieri has just taken part in the French pizza championship which was held at the Porte de Versailles in Paris on the occasion of the Parizza show, the reference show for Italian gastronomy in Paris. Kevin is a pizza maker at the pizzeria pasta L’empreinte, located in the Las hortes business park in the village, and of which his wife Alison Sébastianelli is the manager.
For this 2022 edition, due to health restrictions, the preselection by region was carried out on file. Once selected, regulars and novices traveled to Paris to compete in three events.
The competition began with the test of the best pizza made from the products brought by the participants. The jury noted the taste, appearance and airiness of the dough. Kevin chose to prepare the Ischia pizza, named in memory of the detached island of Naples where his great-grandmother was from. It is composed of tomato sauce, mozzarella, grilled pancetta, roasted cherry tomatoes, parmesan shavings, fresh basil and mini eggplants.
The Cyprianenc jury had one Michelin star. He finished 29th out of 150.
The second challenge was to make the widest pizza in four minutes. Kevin made an 87.5cm pizza and finished 4th.
The last test was based on the speed of rolling out four 30 cm diameter pizzas. He finished 6th.
With his 10 years of experience in pizzerias, Kevin obtained very honorable results for his first participation in the French championship and would like to participate again next year.
