And yet, on this “Mexican pizza” that she has just cooked, there is not a single trace of cheese. The so-called “cheese” sauce is made from cashew nuts and it is the malted yeast that brings the smell and taste.

Even, this pizza will not go in the oven. Pizza dough, made from sprouted buckwheat, but also “a little pepper and carrot to give a little color” – and placed in the dehydrator for 18 hours – will be eaten raw.

Because what Jérôme and Lou offer are raw, vegan and gluten-free sweets: cheesecake, carrot cake, brownie, apple pie, caramel, cookies, donut, pancake, fake Snickers, chocolate mousse, Pim’s-style biscru… She is “a big foodie” and her spouse “a naturopath who is interested in living food, that is to say which requires no cooking. This allows all the nutrients and vitamins of the ingredients to be kept. For example, with regard to vitamin C, in above 60°C, it is destroyed.”

No refined sugar

So, after writing a recipe book on living food, they decided to offer for sale, in September 2020, raw, vegan and gluten-free salty or sweet dishes. “To eat healthy and have fun.”

Since in these pastries, no refined sugar. “We sweeten with dried fruits – dates, for example.” Raw, vegan, gluten-free and above all… “simple. We go to the essentials. To decorate the cheesecake with melted chocolate, I work with a spoon. I cook things that everyone can do at home.” In short, have fun and transmit.

All with seasonal products, and most often local. “But that’s not always possible. For mangoes, for example, we do as close as possible: Spain, Israel…”
