Pasta recipe: how to do it at home without a machine?
Have you ever thought of preparing your tagliatelle recipe fresh, without having to buy a package of pasta from the store? Perhaps, this has already occurred to you, but you have never dared to do so. With or without a machine, in both cases the final product is certainly of better quality than anything you can find in the supermarket! It is very easy to prepare and, in addition, you will be proud to have made it all by yourself! For the purpose, you will need:
- 480g flour
- 5 eggs
- 2 tbsp. olive oil
- 1 C. salt
For the preparation, please mix the flour and salt. Make a well in the center of the flour to put the eggs and olive oil. Mix everything with a fork until you get a thick consistency. Then, knead to have a smooth dough, form a ball and wrap it in plastic wrap. Let it sit in the fridge for half an hour! Then flour your work surface well and roll out the dough with a rolling pin. In the end, it must be very fine! Before plunging your dough into a pot of boiling salted water, fold it over to form a roll. Cut into small slices! Drop them into hot water for about 4 minutes. Finally, let them dry for 1 hour before moving on to our next super tasty pasta recipe!
Succulent pasta recipe that will give you a good start
- 150 g spaghetti (all types of pasta)
- 4 garlic cloves
- 200 g cavolo nero (Italian cabbage)
- 30 g parmesan
- 30g ricotta cheese
While the pasta is cooking in hot salted water, peel the garlic and wash the cavolo nero leaves well. Put everything in the pan with the pasta and boil for 5 minutes. At the end of these 5 minutes, please pour two tablespoons of olive oil into the blender, while adding the cavolo nero and the garlic. After getting a smooth mixture, add a little salt and black pepper. As for the spaghetti, drain them well and save a quantity of cooking water. Next, heat the spaghetti, sauce and cooking water in a large sauté pan for 10 to 15 minutes over high heat. Finally, distribute the pasta on the plates and place the parmesan and ricotta on top of the meal. Add some nuts if necessary!
Tip: in this dish it is very important to use good quality olive oil! The stronger your oil, the better the flavor of your pasta recipe!
Pasta recipe: carbonara-style spaghetti cake
This is a delicious, luxurious meal made by heating up what’s left in your fridge that is sure to amaze everyone! This pasta recipe will offer you a crunchy exterior that contrasts perfectly with its creamy interior.
- 300g spaghetti
- 100 g of parmesan
- 3 eggs
- 250 ml fresh cream
- 250g smoked ham
- 3 sprigs of fresh rosemary
- olive oil
Preheat the oven to 180°C. Prepare the spaghetti in a pot of boiling salted water, drain and let dry! Meanwhile, rub the inside of a mug or small bowl with olive oil. Then, thinly put a layer of Parmesan cheese at the bottom of each bowl. Then, place the spaghetti in a large salad bowl, add the beaten eggs, with the fresh cream and the black pepper. Add the ham, the rest of the parmesan and the rosemary leaves. Mix everything and leave in the small bowls. Bake for about 35 minutes or until golden, crispy and cooked through. Let your spaghetti carbonara cake rest for 3 minutes. Serve with a fresh salad and a slice of lemon.
Pasta recipe with crispy breadcrumbs and cheese
A jar and picnic pasta recipe that your children will love!
- 2 cloves garlic
- 50g pine nuts
- 250g fresh peas
- 100g spinach
- 100g hard goat cheese
- 1 lemon
- extra virgin olive oil
- 600g pasta
- 120g breadcrumbs
- fresh basilic
Toast the pine nuts in a skillet until golden brown. Mix the peas, spinach, basil, 1 clove of garlic, pine nuts and 70 g of goat cheese in a food processor until you have a thick paste. You can add a little lemon if desired. Then, return the already cooked pasta to the pan, add the pesto and stir well! Heat a little oil in a saucepan, add the remaining garlic and breadcrumbs. Then, cook while stirring with a wooden spoon for 4 to 5 minutes or until the breadcrumbs are crisp and golden. Finally, fill your jars with pesto pasta, add the remaining goat cheese and breadcrumbs. And finally, voila! You are ready for your picnic!
Pasta recipe: bolognese with lentils and mushrooms

- 1 carrot
- 1 onion
- 2 cloves garlic
- 1 stalk of celery
- 2 fresh bay leaves
- 4 large mushrooms
- 100g lentils
- 2 tablespoons of tomato puree
- 400ml vegetable stock
- 400g tinned peeled tomatoes
- 350g pasta
- fresh basilic
- Parmesan cheese
- olive oil
- fresh thyme
Peel the carrot, onion and garlic. Cut the celery. Mix everything in a food processor. In a skillet over high heat, add the vegetable broth, bay leaves and thyme leaves, stirring for about 10 minutes or until the leaves are soft. Blend the mushrooms in the food processor until finely chopped. Add them to the pan and cook for 3 minutes. Add the lentils and tomato purée. Season, reduce the heat to low and put the lid on. Then cook, stirring occasionally, for 30 minutes. After 30 minutes, cover your pre-cooked pasta with the sauce and sprinkle with parmesan and basil.
